1: A stir-fry with rice? Nothing to cut up, so easy to eat on your lap. Make the rice earlier, leave it in the colander and run cold water through it. Heat it at the last minute by pouring a kettle (or two) of boiling water through it. Lightly fry any veg you like and meat or fish or shellfish. Best when its colourful: peas, beans cut small, red & yellow peppers or seeded tomatoes in small squares, broccoli, carrots or onions sliced very thin, etc.
2: Bangers and mash? Cottage/shepherds pie? You can make it in advance and shove it in the oven just before. Anything with potatoes or rice, like curry
